Farro Salad with Roasted Sweet Potato & Pistachios

Farro is an ancient grain that’s rice-like in texture and has the same calories and protein as quinoa. Farro’s nutty flavor pairs perfectly with salty toasted pistachios and roasted sweet potatoes. There are a lot of great ways to use farro but this salad one of the best!
