Ratatouille with Mirepoix

A classic French Provencal Ratatouille is a hallmark dish to the summer season. It is filled with summer veggies and fragrant herbs. A mirepoix is used as the essential flavor base or humble beginning to a recipe. It is fundamental to many soups, stews and slow-cooked dishes. Mirepoix is a mix of finely diced vegetables, in this case, onions, celery, and carrots are cooked low and slow in butter or oil to sweeten the ingredients rather than caramelize them (the mix vegetables can vary by country and cuisine).
